The wonderful thing about Arizona is the diversity of its cuisine. You can find restaurants of all kinds in this incredible state, but one type you rarely stumble upon is Chinese and Mexican fusion. At the Breyer Law Offices, P.C., we have been lucky enough to eat at many restaurants and sample the food that Arizonans love through The HEART Campaign. Our newest winner, Panda Libre in Gilbert, is a unique story.
Panda Libre’s owner, Paul, grew up in Utah and worked in the family business, a local Chinese restaurant. He eventually moved to Arizona, where he could enjoy a plethora of Mexican food, culture, and, of course, wrestling. After falling in love with Mexican cuisine, Paul decided to open up Panda Libre, a restaurant that fused his roots with his newest passion.
Panda Libre and Paul have both become beloved in Gilbert. Many of the nominations we received mentioned Paul by name, telling stories of him making bowls of food and taking them to those less fortunate and struggling on the streets. After learning how dedicated Paul was to helping his community, we knew we had to pay his good deeds back.
On Thursday, June 19, the doors of Panda Libre opened to a crowd of customers. People were lining up out the door to get a taste of Paul’s unique menu. Many were looking forward to tasting some egg rolls and burritos. Others wanted to try the Horchata Boba. And still more had no clue what they wanted but were excited to give this interesting cuisine a try.
Paul and his staff had an excellent day working with The Husband and Wife Law Team on their HEART Campaign. Business was booming that Thursday, and we hope it keeps booming for weeks and months to come. If you visit Gilbert and are looking for a bite to eat, consider stopping by Panda Libre. We promise you won’t find anything else quite like it.
